Growing up in the mountains of Pennsylvania, Caitlin traded in the cooler temperatures for the sandy beaches of Miami at the young age of 16. Driven from the get-go, she has been a dedicated member of the hospitality industry ever since graduating from Johnson and Wales University with a culinary arts degree. Completing her externship at Pinehurst Resort in North Carolina where she met Michael was just the beginning. After cooking her way through the resort, she and Michael packed up their life in a minivan and headed to New York City. Caitlin quickly found her place and passion in the front of house operations. She has worked at highly esteemed restaurants in New York City, starting with Tom Colicchio's flagship Craft and then Thomas Keller's 3 Michelin starred Per Se. She later tried her hand at management and quickly elevated the service standards at Mario Batali's 4 New York Times starred Italian restaurant, Del Posto and continued on as the opening General Manager of Eataly NYC's fine dining restaurant, Manzo. At that time she took a brief career pause to dedicate some time to motherhood, but excitedly embraced the challenge of opening her own restaurant in Charleston. Caitlin lives with her husband, Michael, children Julian & Marley, and of course, their beloved four legged sidekick, Fiona in the gorgeous city of Charleston. Caitlin believes that there is love enough in ones heart to truly feel a sense of belonging to more than one city, so splitting time between sunny Charleston and bustling New York felt like a challenge worth accepting.
